This is hardly a recipe and more of a technique. But it's an excellent one to know.
1. Heat oven to 450°F.
2. Bring a very well salted pot of water to boil. It should taste like the sea.
3. Place the cauliflower whole in a pot of boiling salted water and let cook for 6-8 minutes.
4. Remove from water and place on a baking sheet to steam dry for 10 minutes.
5. Slather with good olive oil and sprinkle generously with kosher salt and bake in the oven for 45 minutes until golden and slightly charred all over.
