Pickled Red Onion

 Great on tacos, in salads and even sandwiches.


ingredients1

½ red onion, thinly sliced on a mandolin
Juice of 2 limes
¼ cup red wine vinegar
¼ tsp kosher salt

1. Combine all ingredients in a mason jar and let sit for at least 15 minutes. They will keep for a week or so in the fridge and continue to get more flavorful as they sit.
