My Mom's Brownies

 These are still the very best brownies I've ever had. Not fudge-y and to me, perfect. They are also spectacular straight out of the freezer.

ingredients1

1 cup (210g) sugar
2 eggs
1/3 cup (70g) extra-virgin olive oil
1 tsp vanilla extract
3/4 cup (105g) flour (I use raw buckwheat flour to make them GF)
3 tbsp (18g) cocoa powder
3/4 tsp fine sea salt
1/2 tsp baking powder

1. Preheat oven to 350°F and grease an 8x8 baking pan. Cut one long strip of parchment paper and fit it in the pan crosswise leaving a bit of overhang. This will help you lift the brownies out of the pan easily.

2. Whisk together sugar, eggs, oil, and vanilla. Sift dry ingredients and add to the mix and stir with a spatula until smooth.

3. Bake for 25 - 30 minutes. A toothpick should come out clean but don't overbake.
