This is the salad I throw together most often at home. Sometimes I add some thinly sliced salami if I have it. This makes enough dressing to last us all week.
Dressing:
¼ cup apple cider vinegar
½ cup extra-virgin olive oil
1 tbsp minced shallot
1 tbsp Dijon mustard
2 tbsp maple syrup
½ tsp fine sea salt
Freshly cracked black pepper
Salad:
Organic Girl butter, plus! greens (or other baby lettuce)
Chopped fresh dill or parsley
Toasted pistachios, salted or not
Shaved Parmesan
Maldon flake salt
Combine dressing ingredients in a mason jar and shake. Store in the fridge.
